Introduction: Ginger is one of the first spices to have been exported from Asia, arriving
in Europe with the spice trade, and was used by ancient Greeks and Romans. It is a herbaceous perennial which grows annual pseudo stems (false stems made of the rolled bases of leaves) about one meter tall bearing narrow leaf blades.
Cultivation: It is cultivated in tropical, sub-tropical and humid climate like Ilam district in altitudes above 1500 m with well distributed rainfall, temperatures 28-30 0 C, high humidity, rich humus soil and grows well in slightly acidic soil.
Area of Cultivation: Over 23,000 Ha of land in Nepal.
Estimated Production: Over 284,000 M.Tons (Source: MOALD, 2019).

Culinary use: Ginger as pickled in vinegar or sherry as a snack or cooked as an ingredient in many dishes. Tea:ginger herb tea, ginger honey tea.
Wine: candy or ginger wine.
Continental recipes: seasoning in Indian recipes and is a common ingredient
of Chinese, Korean, Japanese, Vietnamese, and many South Asian cuisines for flavoring dishes such as seafood, meat, and vegetarian dishes.
